Abstract:

To provide a method for masking (reducing) harsh taste, bitter taste and odor (unpleasant odor) peculiar to a highly nutritive food and to provide a highly nutritive food, in which harsh taste, bitter taste and odor (unpleasant odor) peculiar to the highly nutritive food is masked, having good flavor and being readily ingestible.

The method for masking unpleasant odor of the highly nutritive food comprises adding sucralose and/or thaumatin to the highly nutritive food such as a thick liquid food or a gel-like food. In the masking method, the amount of sucralose added is preferably 0.0001-0.005 mass%. In the masking method, the amount of thaumatin added is 0.00001-0.001 mass%.
