Abstract:

PURPOSE: To provide the subject new bacteria capable of producing yeast cell- wall digestive enzyme at a low cost without suppressing its production even in a medium rich in both carbon and nitrogen sources.
CONSTITUTION: The objective method is characterized by digesting yeast cell wall using the enzyme (or a culture fluid containing the same) produced by E24 strain (FERM P-13692) capable of making a mass production of the yeast cell-wall digestive enzyme (YLase) belonging to Oerskovia, and the other objective method for producing yeast extract capable of digesting yeast cell wall is characterized by using this enzyme or a culture fluid containing the same.
