Abstract:
To provide a cellulose nanofiber that can be uniformly and stably dispersed in water, and to provide a use thereof.SOLUTION: Provided is a hydrolyzed bacterial cellulose fiber obtained by hydrolyzing a bacterial cellulose fiber produced by cellulose-producing bacteria in the presence of a cellulolytic enzyme. Further, provided is a fluid dispersion in which said hydrolyzed bacterial cellulose fibers are dispersed in water. Especially provided is a fluid dispersion in which a cellulose-water insoluble compound composite where an alkali-soluble and water-insoluble compound such as polyphenol is supported on hydrolyzed bacterial cellulose fiber is dispersed in water.SELECTED DRAWING: Figure 4
