Abstract:

To provide a sucralose crystal which has a stable configuration and is an artificial sweetener obtaining strong sweetness, and a method for producing it.

The method for crystallization of sucralose from an aqueous solution comprises controlling the pH of the aqueous solution so as to maintain the pH in the range of from about 5.5 to about 8.5 by adding a buffering agent, such as a salt allowable as a slightly acidic food of such as sodium acetate, during the formation of a sucralose crystal.
