Abstract:

To analyze the starch structure of Rhodophyta and separate and identify the synthetase of the starch.

The invention relates to an isoamylase derived from Porphyridium belonging to Rhodophyta. The invention further relates to a gene encoding the isoamylase, a vector containing the gene and a transformant containing the vector. The starch of Rhodophyta has a special structure different from the starch of other organisms, and is useful as a new starch for food and industrial use and the synthetase is useful as an enzyme for the production of starch having a new structure.
