Abstract:
It is intended to provide a less expensive and safe medium for lactic acid bacteria which is usable as a substitute for MRS medium. A medium prepared from whey in which lactic acid bacteria can be efficiently cultured, characterized by containing whey and an enriched a nitrogen source. More specifically speaking, it is preferable that the medium is characterized in that the contents of yeast extract and/or protein digestion products, which are employed as nitrogen sources, are elevated by using yeast extract and/or enzymatic digestion products of whey and casein. By using authorized food additives alone as additional components, this medium is further characterized by being less expensive and safe.
