PURPOSE: To provide a fish body-cutting process capable of cutting a fish body in high efficiency.
CONSTITUTION: A fish body 2 is sliced into three pieces along the backbone by cutting the fish body 2 along the longitudinal direction of the spine 13 at a cutting site provided with the 1st endless blade 10 standing from a base and with the 2nd endless blade 11 standing from a base. The head and guts are removed from the fish body 2 with a fish body supporting member 5 having a blade-passing channel 51 to prevent the contact of the member with the 1st and 2nd blades 10,11, the opened abdominal cavity of the fish body 2 is supported by the inner face of the supporting member directing the back of the body upward, the fish body is transferred to the cutting site provided with the 1st blade 10 and the 2nd blade 11 and is sliced into three pieces along the backbone by cutting the body 2 along the longitudinal direction of the spine 13.
