Abstract:

To provide an efficient method for extracting carotenoid useful as a functional food material or an antioxidant such as astaxanthin fatty acid ester, and also provide a plastid-genome modified plant that produces carotenoid such as astaxanthin fatty acid ester.

Provided is a method for extracting carotenoid from a plant or its tissue, which comprises the steps of: (I) dehydrating carotenoid-producing plant or its tissue by using a dehydration solvent, (II) bringing in contact the dehydrated plant or its tissue with an extraction solvent to obtain a solution containing carotenoid, and (III) adding water and an organic solvent to the dehydration solvent used in (I) and the carotenoid-containing extract obtained in (II) to collect the organic solvent layer containing carotenoid after phase separation.
