To produce a bean jam which has a good body and a good flavor, has a taste similar to the taste of a smooth bean jam, and contains nutritionally and healthily valuable skin ingredients.
This method for producing the bean jam is characterized by continuously performing a bean-boiling process for boiling beans of raw material, a sugar-soaking process for adding and permeating sugar to the beans processed in the bean-boiling process, a crushing process for crushing the beans processed in the sugar-soaking process with a cutter, and a bean jam-kneading process for heating and condensing the beans processed in the crushing process. The apparatus for producing the bean jam is characterized by comprising a heating portion, a water-pouring portion, a water-draining portion, a crushing portion, and a kneading portion, which are necessary for continuously performing the processes in one cooking pot.
