Abstract:

PROBLEM TO BE SOLVED: To provide a method for easily and efficiently producing various starches having from a long branch to a short by carrying out the concerted synthesis of a straight-chain α-glucan by a phosphorylase and the transfer of the α-glucan chain to construct the basic skeleton of the branched glucan and by controlling efficiently the elongation of branched chain by glucose transfer reaction.
SOLUTION: This method for producing branched starch comprises carrying out the synthesis of α-glucan by phospholase a or b using glucose-1-phosphate as the reaction substrate and tetramer maltooligosaccharide or larger one as the receptor and the intramolecular and/or intermolecular transfer of α-glucan chain by starch branching enzyme SBE-II.
