To provide a method for producing β-carotene.
This method for producing a sulfone derivative of general formula (4) (Ar is an aryl group; R is a lower alkyl or a hydroxyl-protecting group; X is a halogen or HSO4) comprises reacting a phosphonium salt of general formula (2) with an aldehyde derivative of general formula (3) in the presence of a base.
