Abstract:

To provide a fermented cabbage drink which contains vitamin U in a large amount and has excellent palatability.

This method for producing the fermented cabbage extract containing vitamin U, the nutritive ingredient of the cabbage, in a large amount, comprising slurrying the cabbage, fermenting the slurry at a medium temperature without adding salt, preferably further subjecting the product to a low temperature fermentation.
