Abstract:
To provide a variant MET30 gene capable of improving γ-glutamylcysteine-producing ability of a yeast and not worsening growth of the yeast, and the yeast keeping the gene.
A cultured product having γ-glutamylcycteine-producing ability and obtained by culturing the yeast keeping the variant MET30 gene having a variation in which serine at 569th position of a protein encoded is substituted with an amino acid other than serine under suitable conditions or a fractionated material of the cultured product containing γ-glutamylcysteine or a food or beverage product containing the cultured product or the fractionated product whose cysteine is produced by heat treatment are provided.
