Abstract:
PROBLEM TO BE SOLVED: To provide mulberry leaf tea with improved sense of taste, while suppressing content reduction of active ingredients, such as DNJ comprised in a mulberry leaf and to provide a method for producing the same.SOLUTION: A method for producing mulberry tea by cooking a chopped mulberry leaf and then drying it to roast is characterized by cooking a raw mulberry leaf at a temperature of 80 to 100°C for 1 to 8 minutes, and sencha and powdered green tea of mulberry leaves are obtained by the method.
