Abstract:
To provide a method for producing a vegetable milk beverage containing bamboo shoot as a main material and rich in vegetable protein, and to provide a method for producing a vegetable milk coagulated food product containing vegetable milk.SOLUTION: Bamboo shoots, water, and sugar are prepared, the bamboo shoots cut into predetermined sizes are put into boiling water, boiled over medium heat for 45 to 120 minutes in the case of fresh bamboo shoots and 7 to 15 minutes in the case of boiled bamboo shoots, then resulting boiled bamboo shoots are taken up, drained, and cooled. The water and sugar are added to the boiled bamboo shoots after cooling before being put into a blender, and these materials are blended to obtain a bamboo shoot milk beverage with bamboo shoot as a main ingredient.SELECTED DRAWING: Figure 1
