PURPOSE: An essential oil extracted from citrus fruit peels is used as the oil phase and an aqueous solution containing water-soluble and oil-insoluble pigments is used as the aqueous phase to form an oil-in-water type coloring emulsion whereby coloring in its real color becomes stably possible with industrial advantage.
CONSTITUTION: An essential oil extracted from citrus fruit peels is used as the oil phase and an aqueous solution containing water-soluble but oil-insoluble pigments is used as the aqueous phase to form an oil-in-water-type coloring emulsion. Water and an emulsifier are added to the coloring emulsion to effect emulsification to give a water-oil-water type coloring emulsion. The above- mentioned water-oil type coloring emulsion is formed by adding the pigment aqueous solution to the essential oil, adding a surface active agent to the mixture and emulsifying the resultant mixture by stirring. At this time, the amount of the essential oil is less than 20wt% based on the objective coloring emulsion. The coloring emulsion is used in food, medicines, cosmetics, etc.
