Abstract:

To provide a phospholipase (A) which is high in safety and is available in food field at ease and moreover retains its activity even in neutral region, and a method for producing 1-lysophospholipid or 2-lysophospholipid using the same.

After a filtrate fluid in which lettuces, green onions or cucumbers are crushed to be filtered or a supernatant fluid upon centrifugation is mixed with an organic solvent such as acetone, a crude enzyme is taken out by freeze-drying or the like the formed precipitates if necessary. The crude enzyme is used as an enzyme upon decomposition of phospholipid.
