Abstract:
To provide: a plastic fat composition capable of applying a melting-in-mouth feeling, crispy feeling, soft feeling and moist feeling excellent to a burned product even when stored in a chilled temperature range; a food product having the added plastic fat composition; a texture improver of the burned product; a storage stability improver of the burned product; a method for improving the texture of the burned product; and a method for improving the storage stability of the burned product.SOLUTION: A plastic fat composition includes cellulose ether having 200 mPa s or less of a viscosity of a 1% aqueous solution at 60°C and one or more enzymes selected from a group consisting of a carbohydrate degrading enzyme and phospholipid degrading enzyme. The mass of oleic acid bonded to the 2-position of triglyceride included in the plastic fat composition is 25 mass% or more and 55 mass% or less to the mass of the entire fatty acid bonded to the 2-position of the triglyceride included in the plastic fat composition.SELECTED DRAWING: None
