Abstract:

To provide a polysaccharide useful as a thickener, a process for preparing it, and the polysaccharide containing thickeners, foodstuffs, cosmetics and medicines.

The polysaccharide is made from a raw material, the seaweeds used for the preparation of agar. The polysaccharide solution with a concentration of 0.5-2 w/w% displays a thixotropic behavior in the range of the temperature of 10-40°C. The process for the preparation thereof and the use for thickeners, foodstuffs, cosmetics, and medicines are also provided.
