Abstract:
PURPOSE: To obtain green vegetables maintaining fresh green for a long period, by preserving green vegetables in a solution of salt.
CONSTITUTION: Green vegetables such as spinach or cabbage and 5W25% solution of salt containing 0.1W10% organic acid salt (e.g. sodium citrate) are packed into a container, deaerated, sealed and preserved at 0°C W freezing point.
