To provide a raw material or seasoning produced further using waste produced when producing food reusing the waste of processed fishery food such as shell.
This process remaining raw material comprises filter residue having as the main ingredient a lobster material for a raw material obtained by baking, drying and crushing the head part and the shell part of crustacean, for instance, lobster, and is formed by crushing and boiling in water the filter residue. The process remaining raw material has high flavor of lobster and smooth taste and is usable in various food raw materials. The lobster flavor seasoning having high lobster flavor is produced by boiling the process remaining raw material together with each kind of seasoning material such as fermented soybean paste. It is possible to use nearly 100% of the waste of crustacean for seasoning and promote effective use of resources by producing through further reusing waste produced when producing food reusing the waste of crustacean.
