Abstract:
To provide an industrially advantageous production method of canthaxanthin and capable of producing it with easy operations and efficiently even in short reaction time.
This production method of canthaxanthin comprises oxidation of β-carotene in a solvent system of water and a water-immiscible organic solvent using an alkali metal chlorate or alkali metal bromate and is characterized, in the oxidation, by adding (a) iodine halide or iodine and (b) a metal iodide into the reaction system including β-carotene, the solvent system of water and the water-immiscible organic solvent and the alkali metal chlorate or alkali metal bromate.
