Abstract:

PROBLEM TO BE SOLVED: To provide both a method by which a fried onion capable of imparting a fragrant flavor to a product such as a curry, suppressing the generation of bitterness and having ultrahigh sweetness can be produced and an apparatus therefor.
SOLUTION: (a) An onion which is an intact whole or cut to a size of ≥60 cm3 volume and hermetically sealed or nearly hermetically sealed in a microwave transmitting container and (b) the prepared onion is then heated with microwaves with a microwave treating apparatus so as to provide ≥90°C temperature of the whole onion and produce drips from the onion in an amount within the range of 1-8 pts.wt. when the weight of the raw onion is 100 pts.wt. (c) The resultant onion heated with the microwaves is subsequently aged at 40-90°C and (d) the aged onion is then fried.
