PURPOSE: To stably obtain the subject high concentration fats and oils by acting a specified immobilized enzyme on a fish oil, hydrolyzing the oil and carrying out separation and fractionation of the obtained decomposed mixture into fatty acids and glycerides.
CONSTITUTION: A Candida cylindracea-derived lipase is dissolved in water so that the content thereof may be 1-30wt.%. A Celite carrier is then admixed therewith in an amount of 3-100 times weight based on the lipase to adsorb the enzyme on Celite and drying is subsequently carried out to obtain an immobilized enzyme (A). Fats and oils such as a docosahexaenoic acid-containing fish oil are then dispersed in water of 1-200wt.% based on the fats and oils to obtain a fat and oil dispersion (B). To the component (B), the component (A) is added in an amount of 10-200 units based on 1g fats and oils and the resultant mixture is reacted at 20-70°C for 1-48hrs. The acid value of the reaction solution is then measured and the reaction is stopped at 50-150 acid value to obtain the reaction product (C). A glyceride fraction is then separated by treating the component (C) using the alkaline deacidification method, etc., thus producing the objective high concentration docosahexaenoic acid-containing fats and oils.
