Abstract:

PROBLEM TO BE SOLVED: To obtain a beer-like wine with tea flavor.
SOLUTION: In a production method for this beer-like wine comprising addition of hot water to ground malt to effect saccharification followed by filtration, the process is as follows: tea is added to a filtrate obtained after the saccharification followed by filtration, the resulting filtrate is boiled to extract tea ingredients, the resultant tea is separated and removed to afford a wort containing the tea extract, yeast is then added to the wort to effect fermentation, the resulting carbon dioxide is dissolved in the liquid followed by filtration so as not to release the carbon dioxide gas, and the resultant filtrate is bottled and then subjected to heat sterilization.
