A specific cysteine S-complex having a structure of formula I [R1 is H, a 1-7C alkyl, phenyl, benzyl, 2-R2-2-R3-vinyl (R2 and R3 are each H or CH3); R4 is H, or together with R1 form 2-R5-5-R6-tetrahydrofuran-3-yldene or 2-R5-5-R6-2,3-dihydrofuran-3-yldene (R5 and R6 are each H or CH3), CH(OH)R7 (R7 is H, a 1-4C alkyl or phenyl)] or formula II (R8-R10 are each H, a 1-4C alkyl; R11 is H, a 1-4C alkyl, phenyl, a 1-4C alkoxyl, etc.; (n) is 0 or 1) is brought into contact with a microorganism usable in foods having an enzyme activity of a β-C-S-lyase and the objective thiol especially impartes with a natural flavor is obtained by a biological conversion.
