Abstract:

To provide an industrial method for producing a phosphatide, by which the phosphatide can be obtained in a high yield and in high purity.

This method for producing the phosphatide is characterized by reacting a phosphatide with a primary or secondary alcohol in the presence of a phosphatidyl group transition activity-having phospholipase D collected from Streptoverticillium hachijoense ATCC 19769 strain in a single aqueous phase.
