Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a ginger processed product in which shogaol is enriched with good productivity.SOLUTION: A shogaol enriching method includes heating frozen ginger, in coexistence with water vapor, at 100°C or more and 150°C or less, to convert gingerol included in the frozen ginger to shogaol.SELECTED DRAWING: None
