Abstract:

PURPOSE: To improve the emulsion stability under heating and oxidation resistance of an oil or fat emulsion by adding BS-1 substance or BS-3 substance obtd. by culturing a specific microorganism to the emulsion.

CONSTITUTION: 0.05-5wt.% BS-1 substance produced by Klebsiella pneumoniae Kps 5002 (Fermentation Research Institute Acceptance Number BP 625) of the genus Klebsiella or BS-3 substance produced by Klebsiella terrigena JCM 1687 is added to an emulsion comprising 10-90wt.% water and 90-10wt.% oil or fat, which is then homogenized.
