Abstract:

PURPOSE: A specific soybean flour and an alkaline earth metal salt are kneaded with materials for making bean jam and water under heating and combined with a baking powder at an appropriate time to continue kneading whereby the titled sweet paste is prepared with good taste and texture.

CONSTITUTION: A soybean flour with a hot-soluble nitrogen index of 20W80, an alkaline earth metal salt, preferably calcium sulfate, further sweetenings such as sugar, fat and oil, emulsifier, flavors and colorant are combined with water and kneaded under heating. When the mixture becomes a little hard, after kneading, a baking powder is added, further kneading is continued until it becomes pasty to give the objective material. The amounts of the alkaline earth metal salt and the baking powder are preferably 0.1W3pts. and 0.5W2.5pts. per 100pts. of the above soybeans, respectively.
