Abstract:
PURPOSE: To obtain a high quality coffee with enhanced aroma and flavor in a high yield by wetting raw coffee beans, heating them under increased pressure in an inert gas atmosphere and then drying. CONSTITUTION: Raw coffee beans are wetted to obtain about 25 to 30wt.% water content of the whole weight, and the beans are heated in an inert gas (preferably carbon dioxide) atmosphere under positive pressure (higher than the atmospheric pressure, preferably 1.4kg/cm<2> gauge pressure) at temp. which is enough to effect hydrolysis and pyrolysis but not enough for carbonization. Then the beans are dried till a stable water content is obtd.
