Abstract:
PURPOSE: To obtain high quality roasted coffee beans having high aroma and flavor even from low-grade beans by roasting raw coffee beans under specified conditions while increasing the water content. CONSTITUTION: Raw coffee beans are treated in an inert gas (preferably carbon dioxide) atmosphere under high pressure (higher than atmospheric pressure) to obtain about 25wt.% water content of the whole weight. Then the wetted beans substantially surrounded by an inert gas atmosphere are heated at enough temp. for enough time for hydrolysis and pyrolysis while carbonization is prevented. Then the hydrolyzed and pyrolyzed beans are dried till a stable water content is obtd.
