PURPOSE: To obtain a water-dispersible fine cellulose composition which readily redisperses into water upon stirring by drying a homogeneous dispersion obtained by dispersing a water-soluble gum and/or a hydrophilic substance into a dispersion of fine cellulose particles together with a oil or fat.
CONSTITUTION: The composition is a dry composition produced by drying a homogeneous dispersion obtained by mixing 0.02-20 pts.wt. fat or oil with 100 pts.wt. composition comprising 20-98 pts.wt. fine cellulose particles and 2-80 pts.wt. water-soluble gum and/or hydrophilic substance. The composition has been regulated so that when it is redispersed into water, it gives a dispersion which has an average particle diameter of 8μm or smaller and in which the content of 10μm and larger particles is 40% or lower and the content of colloid fractions is 65% or higher. Since the composition contains a oil or fat having lubricity, it is easily dispersed into water even with low-shear stirring, without taking any special care such as a pretreatment of a drum surface. The resulting dispersion has a grain-free appearance, and functions as a stabilizer due to the colloidal properties of the fine cellulose.
