Abstract:

PURPOSE: To obtain a high-purity xylosyl fructoside(XF) crystal having ≥0.3mm average grain diameter and properties of noncaking such as granulated sugar from an aqueous solution of the XF without using an organic solvent such as ethanol.

CONSTITUTION: This method for producing a xylosyl fructoside(XF) crystal is to concentrate an aqueous solution of the XF of ≤75% purity without containing an organic solvent to a ≤90% concentration as high as possible, regulate the initial starting temperature of the resultant concentrate to 60-65°C, then grow the crystal while slowly reducing the temperature of the concentrate to about 30°C and recover the grown XF crystal from the resultant massecuite. The recovery of the XF crystal is carried out by allowing the massecuite to stand until the viscosity thereof is reduced or increasing the temperature of the massecuite from 30°C, reducing the viscosity and separating the XF crystal. The resultant XF crystal is a crystal having ≥98% purity, ≥0.3mm average grain size, 1/2 water of crystallization and 112.1-112.3°C melting point.
