Abstract:
[Problem] To provide an acidic liquid food that has excellent manufacturing suitability, prevents water separation and viscosity reduction after long-term storage, and is unlikely to soak into bread or rice. [Solution] The present invention is an acidic liquid food that includes at least water, heat gelatinized starch, and gums, characterized by: the heat gelatinized starch content being 0.5%–4.5% by mass of the whole acidic liquid food; the gum content being at least 0.03 parts by mass relative to one part by mass of the heat gelatinized starch; the gums being Xanthan gum and/or guar gum; having a viscosity of at least 2,500 mPa・s at 20°C; and having a brix value of at least 30 at 20°C.
