Abstract:
A bifunctional bean-derived polypeptide having antihypertensive activity and antioxidant activity, and a preparation method therefor. The method comprises: firstly, extracting a bean-derived protein isolate from beans by using an alkali-solution and acid-isolation method; then, performing infrared heat treatment on the bean-derived protein isolate; and finally, performing enzymolysis by a protease to obtain the bean-derived polypeptide.
