Abstract:
In order to suppress cellooligosaccharides with a high degree of polymerization from occurring in the enzymatic synthesis of cellooligosaccharides, this cellooligosaccharide production method involves a step in which α-glucose-1-phosphate, and at least one type of primer selected from the group consisting of glucose, cellobiose and alkylated glucose are reacted with cellodextrin phosphorylase in a mixed solvent that contains water and a water-soluble organic solvent.
