Abstract:
The present invention relates to a 11-lipoxygenase consisting of the amino acid sequence represented by SEQ ID NO: 1; or a composition for producing 11-hydroxyfatty acid, hepoxilin D3, or trioxilin D3, comprising the 11-lipoxygenase and an epoxide hydrolase consisting of the amino acid sequence represented by SEQ ID NO: 2; and a method for producing 11-hydroxyfatty acid, hepoxilin D3, or trioxilin D3, using the same composition. In addition, the present invention relates to a 12-lipoxygenase consisting of the amino acid sequence represented by SEQ ID NO: 5; or a composition for producing 12-hydroxyfatty acid, hepoxilin B, or trioxilin B, comprising the 12-lipoxygenase and an epoxide hydrolase consisting of the amino acid sequence represented by SEQ ID NO: 2; and a method for producing 12-hydroxyfatty acid, hepoxilin B, or trioxilin B, using the same composition.
