Abstract:

[Object] To provide a spray drying process whereby a dry powder holding the flavor and aroma components of a material, having solubility and being free from thermal degradation can be produced in a large amount. [Means for Resolution] A process for producing a dry powder holding flavor and aroma components that is a process for producing a dry powder by spray drying a water-containing material having the flavor and aroma components optionally together with a hygroscopic component, characterized in that the material is spray dried in the state of fine droplets in a gas atmosphere of an outlet temperature of a spray dryer of 20 to 90°C and a relative humidity at the outlet of from 1 to 40% RH to give a dry powder having an average grain size of from 0.1 to 15 μm.
