Abstract:
The purpose of the present invention is to provide: a fermented vinegar containing a high concentration of sodium acetate and having a reduced harsh taste of sodium acetate; an agent for improving the shelf life of foods, the agent containing the fermented vinegar containing a high concentration of sodium acetate; and a method for improving the shelf life of foods using the fermented vinegar containing a high concentration of sodium acetate. The problem is solved by: a fermented vinegar containing a high concentration of sodium acetate, the vinegar being produced by neutralizing acetic acid contained in a fermented vinegar having a high acid degree in the range of 10-30% with an inorganic sodium salt, and being characterized in that the acetic acid/sodium acetate ratio by mass is in the range of 0.05-0.14; an agent for improving the shelf life of foods, the agent containing the fermented vinegar containing a high concentration of sodium acetate; and a method for improving the shelf life of foods using the fermented vinegar containing a high concentration of sodium acetate.
