Abstract:
Disclosed is a squeezed liquid composition which is rich in GSL and has an excellent balance among the vitamin C content, color, flavor and the like.  Also disclosed is a process for producing the composition.  Specifically disclosed is a process for producing a GSL-containing squeezed liquid composition, which comprises the steps of heating a cruciferous plant at a predetermined heating temperature for a predetermined heating period, and squeezing the heated cruciferous plant.
