Abstract:
The present invention relates to the field of multi-component recombinant food. Disclosed are hemp protein Pickering particles, and a preparation method therefor and an application thereof. The Pickering particles are prepared by an anti-solvent precipitation method taking a hemp protein as a raw material, and formic acid and water as solvents. After a high-unsaturated vegetable oil-containing emulsion is stabilized by the Pickering particles, powdered oil and fat are prepared in a spray drying mode. According to the present invention, by preparing the Pickering particles, the utilization rate of the hemp protein is improved, and the prepared powder oil and fat have the advantages of being green, environmentally friendly, economical, and easy to achieve high stability and a high unsaturation degree, and have a wide application value in the fields of food and medicine.
