Abstract:
Disclosed is a lactic acid bacterium capable of homolactic fermentation using a pentose as a substrate. The lactic acid bacterium can utilize a pentose. In the lactic acid bacterium, the phosphoketolase pathway is blocked and the pentose phosphate pathway is activated. Also disclosed is a method for producing lactic acid from a pentose using the lactic acid bacterium. Further disclosed is a method for producing the lactic acid bacterium.
