Abstract:
Disclosed in the present invention are a method for green and efficient preparation of a human milk fat substitute and the use, which belong to the technical field of food processing. According to the present invention, the human milk fat substitute which is highly similar to human milk fat is prepared by means of using a grease rich in terms of sn-2 palmitic acid and a grease rich in terms of oleic acid, or oleic acid, methyl oleate and ethyl oleate as raw oil, producing a mixed ester rich in terms of an OPO structural ester in one step by means of ester exchange under the action of 1, 3-position specific fat-immobilized enzyme, and then physically mixing the mixed ester and the natural animal and vegetable oil according to the fatty acid composition and distribution of the mixed ester and the natural animal and vegetable oil. The method of the present invention is completed in one step, the operation is simple, and the immobilized enzyme required for the reaction can be recovered and recycled 2-15 times without significantly reducing the yield of the product.
