Abstract:
A purpose of the present invention is to provide a method for manufacturing allulose using an allulose generating enzyme that is highly pH-stable in a low pH region. The present invention is a method for manufacturing allulose, said method including a step in which a polypeptide that has an allulose generating ability is made to act on fructose under acidic conditions of a pH of less than 6, said polypeptide being a polypeptide that comprises the amino acid sequence represented by SEQ ID NO: 6, or a polypeptide that has 90% or more sequence identity to the amino acid sequence represented by SEQ ID NO: 6.
