Abstract:
The method according to the present invention for manufacturing a refrigerated or frozen baked food comprises a step for contacting a dough, said dough containing cereal flour and having a specific gravity of 0.32-0.48 g/ml, with a heating plate to give a baked food and then refrigerating or freezing the baked food. Preferably, the temperature of the heating plate is 165-185°C. Preferably, the dough contains trehalose, a foaming emulsified fat or oil and/or a foaming emulsifier. Preferably, the baked food is a pancake, a hot cake, a waffle, a tai-yaki (a fish-shaped pancake with a filling such as sweet bean paste) or an ooban-yaki (an oval pancake with a filling such as sweet bean paste).
