Abstract:
The present application relates to a method for preparing natural nitrite, comprising the steps of: preparing an extract from a plant containing nitrate; activating a nitrate reductase in the plant extract; and inactivating the nitrate reductase. Through the method of preparing natural nitrite, nitrite can be included in a high concentration from natural raw materials without inoculation of reducing bacteria.
