Abstract:
This method for producing sprouted grain food includes: a germination step of soaking grain in soaking water in a container and maintaining a prescribed temperature to cause the grain to germinate; after the germination step, and without replacing the soaking water, a miscellaneous bacteria reduction step of reducing the amount of miscellaneous bacteria by maintaining the container at a temperature that is higher than the temperature in the germination step but that does not deactivate enzymes in the grain; after the miscellaneous bacteria reduction step, and without replacing the soaking water, a germination maturing step of maintaining the container at a temperature lower than the temperature in the miscellaneous bacteria reduction step to mature the sprouted grain while further promoting germination of the grain; and a boiling step of boiling the resulting sprouted grain by heating the same in the container. Unpolished rice and soybeans can preferably be used as the grain.
