Abstract:
The purpose of the invention is to provide a method with which it is possible to produce surfactin well from culture broth, even using a general-purpose extraction solvent, and produce surfactin efficiently. The method for producing surfactin of the invention is characterized by including a step for obtaining a culture broth that includes surfactin by culturing surfactin-producing bacteria; a step for mixing the culture broth, an acid, a water-immiscible organic solvent, and a surfactant other than surfactin and extracting the surfactin by an organic solvent; a step for separating the water phase and the organic phase; and a step for purifying surfactin from the organic phase.
