Abstract:
The present invention addresses the problem of providing: a method for producing cheese which is suppressed in the deterioration in texture and/or extensibility caused by heating; and a method for suppressing the above-mentioned deterioration. The present invention also addresses the problem of providing: a method for producing a cheese analogue having improved meltability and/or extensibility upon heating; and a method for improving the above-mentioned meltability and/or extensibility. Provided are: a method for producing cheese which is suppressed in the deterioration in texture and/or extensibility caused by heating, and a method for suppressing the deterioration in texture and/or extensibility of cheese caused by heating, each of the methods comprising acting an enzyme selected from glucose oxidase, α-glucosidase, transglutaminase and a combination thereof on a cheese raw material; and an enzyme preparation for use in the methods. Also provided are: a method for producing a cheese analogue having improved meltability and/or extensibility upon heating, and a method for improving the meltability and/or extensibility of a cheese analogue upon heating, each of the methods comprising acting α-glucosidase on a mixture comprising a vegetable oil or fat and starch or starch that is not mixed with a vegetable oil or fat yet; and an enzyme preparation for use in the methods.
